Our "Dark" is actually "Full City Roast" -- darker than Vienna, not as dark as "Dark" roast. The darker the roast, the shinier the beans (i.e., the more the coffee oil shows up on the outside). This bag is ideal for Coffee Shops, Bakeries, Restaurants, Offices and Family Feasts: Our Lyman Estate Private Reserve is selected exclusively from our highest quality beans that have been sorted several times. PR includes beans of all sizes above "Prime" (#16). They have been selected for their high density. That characteristic -- density -- is of greater influence on coffee flavor spectrum than size.
